Beyond your question about him getting stolen, I would worry much more about the possibility of disease or injury. It seems to me that if you don't know these people well enough to trust to leave your male, you probably don't know the history of the female and the level of breeding expertise of the owners.

Why stud him out anyway? It would most likely change his behavior.
