Some will let you stay. I used to groom professionally at a vet clinic, but now I groom from home. If a client was to ask, I would let them stay but they usually wanted to drop off and pick up after work. Now that I groom from home, they can stay if they want to while I do their dog or they can pick up later. If they pick up later, I let the dog play in my yard and groom the dog closer to when they want to pick up, since it only takes a couple hours (depending on how much they want done and how well they behave, etc.).
Just ask the groomer if you can stay if that's what you want. If you want to stay, let them know ahead of time and they will do your dog start to finish while you watch.
