The two most often used meat-tenderizing enzymes are Papain from the papaya fruit and Bromelain from the pineapple plant. Meat tenderizer works by making the protein easier to digest. I use to recommend meat tenderizer, but it's difficult to find any without salt added, and too much salt can be deadly.
