Because he is so young (really too young to be away from the breeder) and he has already had an episode, I think it would be very unsafe to just let him eat when he is hungry. Too much nutrical is not healthy either. He needs balanced meals. I feel bad for you because I know you are trying to figure out something but it can't just be let go. If it is too stressful for you, maybe the breeder should take him back for a couple weeks until he is better? But then I guess I wouldn't do that either because he said your pup was fine just because he was walking. Offering different things can create picky eating but I'd rather have a picky puppy than one who succcombs to hypo. It is impossible to tell when he will eat on his own and could depend on if there is an underlying cause.
I would try different canned foods...more than one or two. If he absolutely stops eating or stops eating anything substantial, he may need to have an IV.
