She should pee by the next morning and poop within a couple days.
The vet will probably tell you no food that night or maybe start with 1/2 of a meal. Anesthesia can make them nauseous. Low blood sugar shouldn't be a huge concern because she should be on fluids at the vet.
Placing an IV before surgery, doing preop blood work, doing surgery on a heated surface and using the correct kind of anesthesia (Isoflurane or Sevoflurane to maintain) will reduce the risks involved.
