I am making mini cranberry orange muffins for an association meeting and holiday party on Saturday. The recipe calls for butter. I don't generally eat butter, so I'm not sure I want to buy a whole box and use only part. Do you think I would be okay using margarine or should I use the butter? These mini muffins can tend to get dry really fast. Thanks for your opinions!
