This is what I can think of:
Beans and Rice - I use black beans and jasmine rice seasoned with salt and pepper. Saffron is a good seasoning too.
Stuffing! - Make or use a vegetable broth and some fresh herbs like parsley or basil. Mushrooms is good to add also.
Cauliflower/Broccoli salad - Try to get some 'veganese' from a health food store. Its dairy/egg free mayo. Cut up the veggies and mix with the mayo. Add some sunflower seeds and let sit over night. (Very yummy!)
