Doesn't sound like a bad plan, just a couple of things to consider:

a) You better pick a dog-friendly hotel on the way back in case the dog ends up getting upset by the move and becomes vocal during the night. If the dog is already crate-trained, that might not be so big of an issue.

b) Also, if I were you, I would buy some Calm Down formula (available at Petsmart for $9.99) to give the dog if it becomes really agitated. Some adoptees have had difficult previous experiences and can be set off by the smallest stuff. Calm Down will soothe any separation anxiety associated with the dog's foster family and make him more amiable and calm for the trip home.

c) Finally, make sure to bring cleaning supplies (wipes, paper towels, a general cleaner like Lysol or Nature's Miracle) for the car ride back, in case the dog is prone to car sickness or has a potty accident.
