When I bake a turkey, I start by rinsing it really well and patting dry with paper towels. I brush it with olive oil, use seasoned salt and pepper and put it in a huge pan with a lid on it. I always cook a huge one, so it cooks overnight at 250 degrees. If you cook a small one, I'd bake at 375, basting about every 30 to 40 minutes until it's light brown, then remove the lid and let bake until golden brown and the crust looks slightly crunchy. (I always buy one with one of those little pop up thingies that tell you when it's done. They're not golden brown at that time - so then you remove the lid and cook til golden brown)

That's all I do and mine have always been moist and tender.
