I think you read that wrong. The section you read is a table explaining the digestibility of various sources of protein. It says corn has 54% digestibility as a protein source. It does not state that the product contains 54% corn.
If it does, then Orijen would not get high ratings from dog food analysis site everywhere. Corn is one of the top allergens - and you can be sure people feeding Orijen would have complained of allergies a long time ago. So far I hear none.
