Enchilladas are cheap and tasty!

Beef Enchilladas

Need: yellow corn tortillas, old el paso enchillada sauce (red), cheese, ground beef, onions

brown ground beef and drain grease, dip tortillas in boiling oil for a couple of seconds, lay them flat in baking pan, lay 1 layer of meat, 1 layer cheese, then another layer of tortillas, another layer of meat, another layer of cheese, sprinkles some onions, place in oven for about 10 minutes.

Chicken Enchilladas - same but use chicken, green old el paso enchilada sauce, assadero (white cheese from wal-mart). You can buy chicken legs and place them in a pot with water to boil. Take 2 forks and shred the chicken right off. It goes fast.

I usually make rice on the side and rice is cheap too.
