OK here are a few that are very easy AND yummy! Both make really good left overs.

Dried white lima beans (small or big pack depends on how hungry you are)
Small- med onion chopped
pk of ham hocks or smoked turkey legs
salt & pepper

Rinse beans, put in a big pot, lay the 'meat' on top, add onions, fill so the water covers the meat. Bring to a boil & simmer for at least an hour.
Take the meat off the bone & mix back in. Enjoy (Smash the bean in the pot a little & it thickens the broth) You can make some jiffy corn bread to go with this too.

NEXT

Chicken legs or thighs (what ever is cheapest)
Viggo Yellow rice mix.
1 T oil
Brown chicken
add rice & amt of water on packet mix & cook per packet inst plus 20 min for chicken. Put salsa on top of you want.
