When I make this for hubby, I sometimes use turkey chop meat instead of beef. I don't measure the ingredients. I just eyeball them.

Chop Meat (Turkey or Beef)
Grated Cheese
Bread Crumbs
1-2 Eggs (depends on how much meat you use)
Onion, Diced SMALL
Peas (From a can or frozen)
Italian Seasoning
Salt + Pepper

I also cut up carrots, mushrooms and yams or red potatoes diced. I then pour 1 small can of tomato sauce and some water on and around the meat loaf. Be sure to cover the veggies and potatoes so they don't dry out. Cook on 350 for at least an hour or longer, again this depends on how big your meatloaf is.

This is one of my hubby's favorite dishes.

PS - You can get really creative. Sometimes I put peas and mushrooms INSIDE my meatloaf. One time, I wanted to try something just for fun and I added a can of salsa to my meatloaf (mixed it in and poured it on top). Came out sooo good, hubby went crazy for it!
