This is my favorite meatloaf recipe:
Italian Meatloaf
1 lb. ground beef
1/2 lb mild italian sausage
1/2 c. chopped yellow onion
1/2 c. chopped red or green pepper
1 clove minced garlic (I use 2 or 3)
1/2 c. bread crumbs (sourdough or italian are best)
1 egg, lightly beaten
2 Tbsp. red wine (optional)
1 teas. worcestershire
2 Tbsp. fresh parsley, chopped
1/2 teas. each dried basil and oregano, crushed (I double this)
1/2 teas. salt
1/4 teas ground pepper
2 Tbsp. grated parmesan
1 8 ox. can tomato sauce, divided
1 1/2 c. shredded mozzarella cheese
Combine 1/2 c. each of the tomato sauce and mozzarella and all other ingredients. Gently pack into a greased loaf pan and bake in a preheated 350 degree oven for 45 minutes. Pour off drippings.
Cover with remaining tomato sauce, add remaining cheese. Continue baking until the internal temp. reaches 160 degrees. Let stand 10 minutes. Pour off grease, remove from pan and slice. |
