When I cook my chicken, i always coat it in eggs, then some flour mixed with some seasonings, then egg again, and another dip in the flour, I usually have good results with the double dipping, and i only fill my pan with oil to where it is covering 1/2 of the chicken, and turn it a couple times. Hope this helps, if you cant think of anything else.
