My husband makes a great eggplant dish.
(please excuse me for the informality of this recipe, it's just sorta something we do - we've never written it out before.

First you peel, then dice up the eggplant. Then saute it in Olive Oil til it's "done", or soft, maybe a few pieces may become a wee bit browned. Keep turning it, so oil coats all the chunks & it gets evenly done.
Then put it in a big pan like a 9x11 baking pan. Put some spaghetti sauce on top of that. Then put a packet of shredded Mozzarella on that. Bake til done, About 375 for about 20 minutes (just keep looking at it and if the cheese is melted & browned, it's done).
It's good. And even better after it sits a while and all the flavors meld together.
