Ok...i have no idea what its called cause my mom makes it....ALL i know is that its FANTASTIC!!
Here's what you do....Slice the eggplant the long way..so you have a long thin slice...then dip it in a beaten egg and then put breadcrumbs all around it. After you have a bunch of slices....fry them each on both sides..until golden brown.
Then ...add a slice of ham and a piece of mozzarella on top of each eggplant piece...roll the eggplant(like a little cannoli) and put a toothpick in it to hold placement. Put them all in a baking dish and add tomato sauce over it...cook for a few minutes til you see the mozzarella starting to melt. Taddaaaaaaa...its done!
I guess its a different Eggplant parm. version. But oh my god its SOOOOO good!
