Well, there's always the old "fetch" standby. You could get some doggie safe bubbles (I know they have them at Petsmart) and let him run and pop them. My husband plays hide and seek with our dogs, and they love to "find" him. They also "sneak up" on each other, and then whoever is being snuck up on runs the other way when they spot the "sneaker".
Training him to do tricks is also a great game to play-it helps him learn, teaches him patience and obedience, and is a great way for you to bond. Start with easy ones like "sit, shake, and drop/down". You can increase the difficulty from there!
