It also seems like no matter how much I cut off, even just a litte nail and he will bleed. Its very hard to tell where the quick is because his nails are black. I can trim just a little off and he will bleed.

Try a rough emery board. They shouldn't bleed. The quick must be long on your yorkies nails if they're bleeding - you can file them so it doesn't hurt him. I use an emery board on my girls between cutting and if you do it fast - it CAN be done with minimum Drama Queen antics
edited to add - just pick up one in your local walgreens and use the rough side - it really does work
