It probably depends on the diet, but in general, most diets are the precooked weight. For example, you could take a pound of beef, and dry it in the oven and it would be no more than a few ounces, however, it would have the same calories as the full 16 ounces. Meat would have more calories after cooking if you fry them in oil, but you probably know that.
