omg so sorry lol yes i have it, here it is. i've never tried it yet but let me know if you make it. Idk if you're a vegetarian, if you are this has chicken broth in it, i guess you can just make it without it.
Tender ginger tofu
Ingredients: 2 C fat free reduced sodium chicken broth
1 3/4 C water
1/4 C mirin(sweet japanese sake, rice wine, you can substitute w/ brown sugar but wont give authentic japanese flavor)
2 tbsp low sodium soy sauce
1 tbsp fresh minched ginger root
1 tsp chili-garlic sauce(like sriracha)
1 14 oz package water packed firm tofu, drained and cut into cubes
1 1/2 C shredded carrots
6 oz snow peas, trimmed and cut in half diagonally
1/4 C fresh chives
1. In a large saucepan combine broth, water, mirin, soy sauce, ginger and garlic sauce and bring to a boil.
2. Stir in tofu, carrots, and snow peas and return to a boil.
3. Reduce heat and simmer until vegetables are tender, 6 to 8 minutes
4. Stir chives and serve.

My mom also makes Parmisian tofu, its really good, i can ask her how to make it if you want
