I think if you find a good breeder and let them know you want a more submissive dog, you will be fine. I would definately find a breeder that really seems to know their dogs, so they can guide you in the right direction. All dog are different; my male Rottweiler is very submissive. Rotties are generaly described as dominant and dog aggressive. My male Maltese bosses him around all the time and so does my mom's schnauzer.
