I imagine some Yorkies have more ear hair than others; Joey seems to have less now than he did as a puppy. Many people recommend ear powder for ease in plucking, but I haven't' tried those yet, once a month is more than enough for his ears. For trimming the ear, I agree with Shelby& Seymour, and trim the hair with the contour of the ear, you could go further than 1/3 down, some dogs might look better with slightly more or less than a third, but I would vary this too much. It's important to shave the top third of the ear too, both front and back.
