Well, this might be a little lame and simplistic, but does Lexie eat any canned food? You could form it into a cake shape and then make up a batch of cream cheese "frosting" for it and decorate it with carob and yogurt chips. And you can thin the frosting a bit and put food coloring in it and write her name on the cake if you like too.
