5) once the body has been on a premium, hypoallergenic, nutritional diet (with meds/supps) for a good 4-6 mths - then I would attempt weaning ONE thing at a time

That would be my approach, BUT - I would use a nutritionist (such as Susan Davis, who I've mentioned to you already) to help me achieve those goals.
