If you take her, your vet can give you Cerenia, which settles their stomachs and keeps them from being sick. Does not make them drowsy or sedate them. Also ginger snaps have been used by some for car trips -- but I'd go with the Cerenia and it needs to be given an hour before leaving.
I would always choose to take her with me. But that is because I miss my dog, not because she wouldn't be okay with me gone. It sounds like all of your options will work. Just need to decide what in your heart you want to do.
