Holy cow. I'd be fat too if I ate all that every day. I'm so happy for him that he is going to be taken care of properly.
I would just put out the food, if he's hungry he'll eat. and if not well then he'll lose some weight. Dogs usually eat better if there is another dog there to compete with.
