Just a thought. Are the clips you are putting in her hair light weight? I find that if the clips are a little heavy, Gypsy will have them out in a heartbeat. I use pony tail holders for little kids usu with bows on them and she will leave them alone.
I don't groom Gypsy myself so I can't help you there. I usu leave her short except a small topknot.
