Not necessarily. Evangers cooks their wings and thighs so the bones literally fall apart when you touch them with a fork. I have recreated the same texture by using pressure cooker, it takes 4-6 hours. I make a stew with carrots, chicken wings, sometimes potatoes, other vegies like peas. Then when it cools enough to remove the top, I might add some cooked rice or some pasta and let it cook over the heat until it is done. My girls love it.
