That depends...on ribs, no marinade and we use a dry rub. On chicken, we soak them in a marinade...but the rub is key! That is where all the flavor is! My hubby found a BBQ Forum that he frequents...anything you would ever need to know about BBQ is there! Lots of competition cookers are there and glad to share what they know.
