It gets really slimey in liquid - as in soups. Sounds like those southern folk like it deep fried a lot. Or, as I like it (since I don't have much choice) is chopped fresh and sauted in a pan with butter and maybe a spice or two sprinkled on it. Or you can get it pickled. To me, they tasted just like regular pickles.
