You have some very nice architectural details and furniture. They are pretty classic, so I think you can go any direction you want. I would just start a room at a time with new paint and replacing all the southwest accessories with French country or whatever theme you decide to go with.
Or if you want better flow while you are in the process start with painting every room first, painting over the wall murals, etc. Then slowly start replacing the accessories. You will already have the ones off the walls that you paint. Start by taking out the ones that are obviously southwestern in feel, but leave the more neutral southwestern until you can replace it with what you want. Did you do all the painting yourself? You are very talented.
