Well the Kodak EasyShare is one of the easiest, imagine that lol, but my mom (who probably couldn't even turn a computer on! haha) loves to use it in combination with the kodak printer. It's all so simple. They also have different "levels" of bells & whistles depending on how much you want to pay. This past xmas my dad replaced my mom's easyshare kodak with the same thing, just a fancier, more expensive model. As for other models it's always fun to go into a store that displays them (like Best Buy) and play with the ones they have sitting out.

Once you have your photos you just connect the camera to your computer and the default program should pop open and prompt you. On windows it would be Scanner and Camera Wizard. You son can show you how to resize them and posting photos here on YT is super easy.
