Have you tried taking treats with you? When you approach a person or animal, try to have Ambrose sit and wait to get the treat. That might help equate meeting people and pets with good things instead of his going into "protect" mode.
We do pretty well on walks, but we're dealing with the barking when someone has the nerve to walk past our house!!
