I bought one of those smoking BBQ grills from Wal-Mart. Has the main part of the grill and then on the side has where you put in the charcoal and wood. So far I have done a beef brisket and a boston butt on there and they have turned out great. The meat is just falling apart as I am pulling it off the grill. It is kind of hard to say how long exactly it takes to cook. I try and keep the temp around 200 to 300 degrees.

I got me some mesquite wood that I am gonna use to cook the chicken on. I am still trying to find some body that has apple wood and peach wood for sale. That definitely adds a great flavor to the meat.
