  When Chloe was on it, that is what I did.  I made a week's worth, then I weighed out the portions and plopped a scoop in to zipper sandwich bags and stuck them in the freezer.  Then, the night before, I'd put one in the fridge to defrost overnight--kinda like how you do it with the raw medallions.
