OK....I just called the butcher where I get the marrow bones....the reason that they are in such relatively short supply is because they are the HIND femur bone...so they only get 2 packages from each cow (so yes, BEEF).
Soup bones are completely different and they have lots more meat on them. They might be almost as hard and I did use some once, but they were too big of a hassle to get the meat off, just the way that they're cut I guess.
Beef bones won't necessarily be marrow bones; but marrow bones and femur bones are the same.
