Default chewing the walls

Lola has been so wonderful for the past year--She stays in a hallway near a bathroom with her pee pads while we are away and has never chewed anything before.
All of a sudden the past week she started to chew on the plaster wall in the hallway and has made a hole in the plaster. I moved the gate to cover the hole and now she has started another one! I am at my wits end!! We don't want to replaster it until this behavior stops but don't know how to stop it.
I am thinking of putting her back in the crate while we are away and going back to the basics. Being angry at her when we return doesn't seem to work. She knows she has been bad cause she runs away and hides when we come home. I feel bad about taking away her freedom but what else can we do?
Any ideas?
