This is a recipe I make to go with Mexican food. It goes a long way and tastes great!
1 large can white meat chicken, drained and shredded
1 small can green chiles drained and chopped
1/2 small onion, finely minced
1 tbsp butter or margarine
1 block softened cream cheese
flour tortillas
1 pint whipping cream
1 cup shredded Monterey Jack cheese
Saute' onion and chiles in butter or margarine for 3 minutes. Add chicken and stir well. Add cream cheese and heat on low until thoroughly mixed.
Put 2 heaping tbsp chicken mixture on each tortilla and roll up. Please seam side down in baking dish sprayed with "Pam" spray.
Pour shredded cheese over all, then pour cream over all of the above.
Bake at 375 until lightly browned and bubbly.
Serve with all your favorite Mexican condiments.
