The soda bread can be baked in a loaf or cut into scones. For ww, each serving has 4 points each.

Irish Soda Bread (or Scones)

Amount Measure Ingredient -- Preparation Method

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar
1/4 cup shortening
1/2 cup raisins -- or currants
1 teaspoon caraway seeds -- optional
1 large egg
2/3 cup lowfat buttermilk

For loaf, preheat oven to 375°, for scones, preheat oven to 425°

Sift together dry ingredeints. Cut shortening into the dry mixture until it resembles coarse crumbs. Stir in the raisins (or currants) and the optional caraway seeds. Mix together the egg and the buttermilk and add to the dry mixture just until combined. Knead only 2 times or so if necessary (over-working the dough will make them tough and rubbery).

If making a single loaf, form into a ball and cut a cross into the top.
Brush with milk, and bake on a sheet at 375° for 30-40 minutes.

If making scones, shape dough into an 8" square and cut into 9 squares (make a tic tac toe with your knife). Brush with milk and bake at 425° for 12-17 minutes.
