have you been to Epcot Lately? They have some GREAT new rides (spaceship earth (or something like that) Test Track, Soarin)
Have you done MGM?? i LOVED it there!
Also I hear the Animal Kingdom has come a long way.. we went when it was new and it didn't have that much but it's supposed to have a great new Sasquach ride.
If you are looking for non-disney things. An Airboat tour of the Everglades is AMAZING. we've done it twice and it was great BOTH times!
