Stinky ears are bad, this is a sign of infection, get him to a vet.
To OP, do you use a baby shampoo for dogs or human baby shampoo? Dog's skin has a different Ph. and you could be drying his skin out. Also, part of it depends on how often your dog plays outside and his diet. Their are grooming spays that you can use to freshen them up between baths.
