It was so easy, I couldn't believe it. So much easier than when I switched from kibble to homecooking. Did you try NV's interactive food calculator? It tells you how many medallions to feed:

Just enter Lucy's info. and you'll know how many medallions per day.

I really like NV's lamb, venison, rabbit. Anecdotally, it seems that the lamb and venison is easiest for them to start on. I've seen some on here who've had a couple digestive issues from starting right off on beef or chicken (being a bit rich, perhaps?). My babies had no issues whatsoever - I started them on venison, then lamb (and Marcel has a history of terrible digestive issues - but did great w/ raw transition).
