Default Question about giving bones

I've read a lot of threads here that say that giving marrow-type bones is one of the best things for dog's teeth.
I am wondering if it's safe for a dog who's had pancreatitis to have them (or should I take the marrow OUT?). I just wasn't sure if that wouldn't be good for him. I know they aren't supposed to be cooked.

Also, when you feed them other raw bones, like chicken or lamb, do you just take the raw meat off them? Do you leave any of the meat on there? The thought of uncooked meat just makes me a little uncomfortable.
