I don't know about the ear taping, as my two had their ears up when I got them.
As for the treats, try to keep them very small and soft, such as little bits of cheese broken into tiny pieces, or cheerios work really good too, I used those and broke them in half, as my Yorkie tended to inhale things when she was young.
