I use one from the Atkin's diet book and it's really good. Here's the recipe if you want to give it a try:

Crustless Quiche

4 ounces nitrate free bacon
1/2 yellow onion, thinly sliced
6 eggs
3/4 cup heavy cream
2 boxes (10 ounces each) frozen, chopped broccoli or spinach, thawed and squeezed dry
1/2 pound Gruyere cheese, shredded
1/2 tsp. salt
1/4 tsp. pepper

1. Heat oven to 350 degrees. Butter a 10 inch tart pan or a 9 inch deep pie plate.

2. In a large skillet over medium heat, cook bacon until crisp. Drain on paper towels; coursely chop.

3. Remove all but 1 TBSP. bacon drippings from skillet. Add onion and cook 5 minutes, until softened but not brown. In a large bowl, combine eggs, cream, broccoli, cheese, salt and pepper. Stir in bacon and onion.

4. Pour mixture into prepared pan. Bake 1 hour and 15 minutes ( tenting in the center with foil to prevent over browning if necessary) or until a knife inserted in the center comes out clean. Cool 5 minutes before cutting into wedges.

My husband and I both love this recipe and I have had good luck freezing the leftovers to use later.
