I do have a trick that I think is very good. It is yogurt cheese. You get a large carton of fat free plain yogurt and you put it in some cheese cloth or an old thin tea towel. You "hang" it in your fridge and let it drain for about 24 hours.
At the end of the 24 hours, it has the consistency of cream cheese and can be substituted for cream cheese in any recipe. It has about 10 calories per tablespoon. It will reduce to able half of the volume you started with. I like it on baked potatoes.
One of my favorite recipe's is green salad.
2 packages of sugar free lime jello
1 carton of fat free cottage cheese
1 cup yogurt cheese (can use more or less to taste)
1 small can crushed pineapple - well drained (you can rinse it to reduce calories)
dissolve the jello in a cup of hot water. Put in fridge or freezer till almost set, but not quite. Stir in carton of ff cottage cheese and yogurt cheese (I use the mixer to stir in the yogurt cheese - but I leave some "chunks" because I like to taste it). Stir in the pineapple.
It is a great dessert or snack. Also, you can use any flavor of jello you prefer. You can leave out the pineapple, if you want even lower calorie. |
