Was too busy to even think about Chips last night but I see we are still going strong! I remember Eric Estrada. He was Hot in his time. Now not so much!
But I did think about you yesterday Nikki! I made a side dish with layers of fresh tomatoes and basil/spinich pesto and baked it in the oven YUM. we did use a little dairy on top but are there non dairy versions of cheese..tofu like products that melt? OMG...i bet it would be good with a little eggplant CHIPS squeezed in there as a layer too.
