I made them thinner than 1/4 inch.
To dry out a took them out of the oven and turned it off. Then I flipped all of them and put them back in the over overnight. I don't think this is a reliable way to get all the moisture out, so I wouldn't keep them longer than you would keep cookies for yourself or you could buy a food dehydrator.
