I even leave her food down at night...but I am thinking about taking it away at night. Recently I hear her eating sometimes late at night and really early in the morning (while we are in bed) and I don't want her to get in that habit.

I would not take away food for a 10 week old dog...She can still have a hypoglycemic episode. 10 weeks old is very young still. They need to have access to food at all times when they are this little.
If you want to take her food away at night when she's older, then I would recommend giving scheduled feedings instead of free feeding. The reason I say this is because maybe she hasn't eaten all day because she's expecting to eat at night, and then she goes over to her bowl, but it's empty because you took up the food. Ya know??
